Aya no Mori Matcha by Kanbayashi Shunsho

13.9988.99/0.00024836 – 0.00157980
Named after an ancient tea garden predating the Uji Shichimeien, which was established by the Muromachi Shogunate, Aya no Mori is a delightful matcha ideal for everyday drinking as usucha (thin tea). This matcha has a rich, full-bodied flavour, blending creamy, slightly nutty, and lightly toasted notes. Its aftertaste is impressively long-lasting and satisfying. Compared to Ryo no Kage, it offers a more rounded and intense flavour profile. For the best experience, use water at 85°C (185°F), as lower temperatures may bring out a slight bitterness.

Biwa no Shiro Matcha by Kanbayashi Shunsho

19.99128.99/0.00035487 – 0.00228990
In the Kanbayashi Shunshō usucha portfolio, Biwa no Shiro lies in the middle as a high-quality usucha. Shogun Ashikaga Yoshimitsu, best known for building the Golden Pavilion, had a deep appreaciation for Uji tea and established seven tea gardens. Biwa, which this tea was named after, was one of these gardens. This tea has an irresistible, sweet milk caramel fragrance, a complex, multi-faceted flavor, and a silky and pampering texture. Prepared as an usucha, it is dominantly nutty with macadamia and cashew notes which is layered with a darker, deeper tone of woodsiness, reminiscent of sandalwood. This woodsy layer gives the tea an interesting and unique quality. A sweet and nutty aftertaste lingers long after drinking the tea. It is mellower and richer in umami than Usucha Mozumukashi, the tea directly bellow it in the Kanbayashi portfolio.

Horai – 20g

20.00/0.00035505
We recommend Horai for your first taste of Ippodo matcha, as it is a smooth blend with umami and just a hint of astringency. Try this matcha as koicha to experience the full depth and nuances of its character. As usucha, Horai is an accessible tea to serve to beginners and connoisseurs alike at teatime. For matcha lattes, we usually recommend a medium-to-light category matcha with more astringency, but some will choose Horai, for its bright color, umami, and soft astringency.

What Is Matcha and Why Is It Unique?

Matcha is a fine green tea powder made by stone-grinding specially grown tea leaves known as tencha. Unlike regular green tea where you steep and discard the leaves, matcha is whisked directly into water — so you consume the whole leaf and all its nutrients.

Matcha delivers:

  • A smooth, grassy flavor with natural sweetness
  • L-theanine, which calms and sharpens focus
  • Chlorophyll and catechins for powerful antioxidants
  • A vibrant, ceremonial ritual that turns tea into a moment of peace

This centuries-old Japanese tea has gone global, and with good reason — it’s as energizing as coffee, but far more calming and clean.

FAQs About Buying Matcha

Q1: What’s the difference between ceremonial and culinary matcha?

Ceremonial matcha is higher grade, smoother, and ideal for drinking. Culinary matcha has a stronger flavor suited for cooking, baking, or lattes.

Q2: How long does matcha stay fresh?

Unopened matcha can last up to a year. Once opened, refrigerate and consume within 1–2 months for peak flavor and nutrition.

Q3: Can I drink matcha every day?

Yes — matcha is a healthy daily ritual. It boosts focus and energy without the jitters of coffee, and it’s packed with antioxidants.

Q4: Why is some matcha more expensive?

Higher prices usually reflect better growing conditions, hand-picking, shading techniques, and finer grinding — all of which improve taste and color.

Q5: Where is your matcha sourced?

All of our matcha is sourced directly from reputable farms in Japan, including Kyoto and Uji, where matcha has been cultivated for centuries.
